How To Make Pumpkin Soup


Here is one healthy recipe that I cook  and also very easy to prepare. Pumpkin soup. It will only take you around 20 minutes total. So here is what you will need:

1 small butternut squash, but if you can't find it,any type will do
1 whole onion, chopped
2 cloves of garlic, crushed
salt and pepper
3-4 cups chicken stock


First, you prepare all the ingredients. You can cube the squash into small pieces, chop the onions and crush the garlic.



A butternut squash, if you don't have any idea what it is, is a squash that is pear shaped. This has a very nutty flavor, and I sometimes find it in the market, although not very often, so when I do, I always buy this kind. If not, the regular ones will do.



Heat up a pan, and add around 1-2 tablespoons of oil. If you use olive oil, olive oil is best, but if not, you can just use the regular oil you use for cooking. Add the garlic and the onions, stir for around 1 minute or so.



Add the cubed squash pieces into the pan. Stir so that the oil can seep into the pieces.


 Add the chicken stock. If you don't have chicken stock, you can go ahead and cheat, use water and add a chicken bouillon. I do that sometimes too. :-) Bring to a boil, and lower the fire and simmer for 15-20 minutes. Season with salt and pepper.


Cool it down a bit, and then put it in the blender in batches and blitz it for a few seconds. If you want some texture, you can blitz half, and leave the other half unblended. Here is the finished product, perfect to eat with homemade garlic bread. And that will be another recipe.


Tip: Sometimes peeling a squash is hard, right? To make it easier and faster, when you cut them into portions, cut them right where the ridge is. That way, you can just run through a peeler on every piece and will only take you a few seconds to peel each piece.
