Easy Banana Bread Recipe

Hello everyone! It’s been a while since I posted a recipe, so while I’m resting at home, I thought about posting another one. This time it’s a simple recipe for banana bread.

If you have overripe bananas at home, don’t throw them away. They are the perfect bananas for baking. Ready to bake? 

Here are our ingredients:
4 large eggs
3/4 cups brown sugar
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 pack butter, softened at room temperature
1 tsp vanilla extract
5 fully ripe bananas, mashed


And as usual, here is the finished product for you to feel motivated.


Since I did not have overripe bananas at home this time, I just used regular ones. It's just a little harder to mash, but it's okay to use.



In a bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.


In another bowl, with an electric mixer, beat the butter and sugar together until it becomes creamy. 


It should look like this after it has been beaten. Oh, and before I forget, pre-heat your oven to 180 degrees. Or if you're in a part of the world where your ovens are calibrated in Fahrenheit, it should be 365 degrees.


Add in the eggs and vanilla and beat until mixed together, a few seconds.



It should become a little 'watery' after the eggs are beaten in.

Scrape whatever is stuck on the beater before taking it off. With a wooden spatula, add the flour and the mashed bananas. Mix until everything is totally integrated, making sure that the flour is not over beaten, as it will get tough.



It should look like this after everything is mixed. Transfer the mixture into a baking pan.


Since I only have one bread baking pan at home and this batch is more than what will fill a loaf pan, I just used a round baking pan this time, lined with parchment paper to make it easier to wash up later.

Put in the oven at 180 degrees and bake for around 45 minutes or until done. To check and make sure that the bread is done, you can insert a toothpick in the middle. If the toothpick comes out clean, then it is done. If some particles got stuck though, put it back in the oven and bake longer until the toothpick inserted comes out clean.


Your kitchen should be filled with the aroma of the baked banana bread around 20 minutes after you put the mixture into the oven. Once done, take it out and let cool for around 10 minutes before taking it out of the pan.


Transfer it to a serving dish. Best eaten when warm, and you may want to spread some butter on your slice.


A glass of fresh milk will complete the meal, but perhaps you have your own choice of beverage to complement it. In any case, bon appetit!
