No Bake Mango Cake

Hello! It's been a while since I posted a recipe here. Who loves mangoes? It is one of my favorite fruits, and we've had an abundance of mangoes the last few weeks or so, and I decided to make mango float to bring to my niece's place one weekend when we went swimming.

Like the title suggests, it doesn't need any baking at all, you just have to have it chilled. This was transported to another place, somewhat lost it's consistency as it was taken out of the fridge for a while, got shaken inside the car, so pardon the picture of the slice that I took.

All you need is all purpose cream, condensed milk, graham crackers and of course, sliced mangoes. For this amount, I used 3 packs 250g of all purpose cream, a small can of condensed milk, 2 packs of graham crackers. Just mix the all purpose cream and condensed milk together. The cream can be chilled overnight,and you can use an electric mixer to blend it until it becomes creamy, but room temperature is also fine.

As for the mangoes, just slice them thinly and make sure you have enough to put on three layers of crackers.

Line the crackers in a container that has a flat surface for even layering. 

Spread the cream mixture on top, making sure every piece of cracker is covered. After that you spread out mango slices evenly. Put another layer of crackers on top of the mangoes and repeat the process.

Your last layer should be mangoes. Doesn't it look delicious? :-)

As a finishing touch I sprinkled cocoa powder on top. Instead of the cocoa powder, you can also use powdered graham crackers, or milo granules, or even coffee powder, if you like. Chill in the refrigerator for at least 4 hours.

Here is the finished product, looking a bit disheveled because of the car journey, but delicious nonetheless. It was all gone in a few minutes, and I even made lasagna and oatmeal cookies with it!
