Grilled Stuffed Milk Fish

Hi there! How's every one doing? It's been a while since I last posted a recipe. Been quite busy lately, but here's another recipe that I cook when we're having parties.

Some people do not eat meat, so there has to be an alternative dish for them, and fish is a good alternative to meat. In this dish, I use milk fish, or bangus in the Filipino language. This fish can be cooked multiple ways, and grilling is one of them.


Here is the cooked fish, just so you know what it will look like after. When you buy the fish, inform your vendor that it is for grilling and ask them to debone it. This fish is delicious but it has a lot of bones so I always ask the vendor to debone it for me, and they always do.


Fish of course, has that fishy smell, so I chop up a thumb sized piece of ginger, a couple of cloves of garlic, and a couple of tomatoes as well, as a stuffing.


After you have washed your fish and pat dry it, rub some salt and pepper onto it for taste.


On a flat surface, in this case it's my chopping board, I spread the cut up tomatoes, ginger and garlic evenly on 2 medium sized fish.


After stuffing it with the chopped veggies, wrap each fish in foil to make for easier grilling, and so that the fish will cook evenly and not get burned.


If you're using charcoal, you can grill your fish around 15 minutes on each side. To check if its done, you can insert a toothpick in the middle of the fish. If the toothpick goes in easily, it means the fish is cooked.


Let it cool for 5-10 minutes before taking off the foil wrapper to avoid the skin of the fish from sticking into the foil. And when you do take it off, do it gently to leave the fish whole and not broken into pieces.


Cut your fish into pieces for easier picking and eating. If you want to make a dip/sauce, you can squeeze the juice of several pieces of kalamansi, or a lemon, add a couple of tablespoons soy sauce, and a sprinkle of chili flakes to complete it. Bon appetit!

PS: If you don't want to be bothered with lighting up a charcoal grill, you can instead cook it in the oven for around 30-45 minutes at 180 degrees.
